Sustainability Market – Meet the Stallholder – ByGillaki

Indulgent brownies dripping with luxurious toppings. Greek-inspired kataifi tiropita with feta and ricotta. Biberi ekmek Turkish red pepper flat bread with a twist. These are just some of the Mediterranean home-baked treats ByGillaki sells at Harpenden Sustainability Market.


ByGillaki is run by Gillian Harris, who has worked in the hospitality industry for 25 years. The pandemic prompted her to kickstart her passion for home baking. Seeing her products and creativity come to life, ByGillaki was born. The stall has since become a regular fixture at the Sustainability Market and other markets in the area.


The business is a family affair, with Gillian’s family pulling out all the stops to help. Various family members help her set up and man the stand. Gillian says, ‘it’s a team effort and I couldn’t do it without them.’ Her family also serves as her official taste testers so you can be sure everything has met their high standards!


Gillian’s top eco tip? Try challenging yourself to make a dinner out of leftovers. Or how about scouring the bottom of your fridge’s fruit and veg compartment and making a soup out of what you find? You’ll be surprised what you can create.


Gillian loves the atmosphere of the market and everyone’s passion for sustainability. She says ‘year on year never fails to impress me with the inclusive, welcoming staff. It’s a true joy to be part of.’


Come say hello to Gillian on the 16th — and if you know a Greek word or two you’ll get an even bigger smile. She’s still learning the language after 15 years of living in Greece and 40 years of study.
